|Frumenty is one the most ancient dishes which is cooked in variant ways from the Balkan States to the Middle East. Greece is in the first position, as it is considered a purely greek dish. When Greeks want to avoid an errand they often say “Eho trahana aplomeno” (=I have laid frumenty). It is pasta made from flour and milk and it has a granular and uneven shape. It exists in different varieties: sweet and sour, coarse and fine. Three cups of frumenty correspond to a full meal. This dish intends to take us back to our roots and remind us that it is both traditional and modern. It is low on calories and it has a high nutritional value. Modern cuisine classes it as a “gourmet” dish.
