|Truffle or “caviar of the earth” is a valuable tuberous mushroom which grows underground at 6-15cm depth and lives in symbiosis with the roots of higher plants such as bushes and trees. In Ancient Greece it was known as “ydna” and they believed it was created from Zeus’s lightnings. Truffle has many varieties, but especially interesting are the white and the black truffle. Healing and aphrodisiac properties are attributed to the truffle. It has an intense flavor and only a small quantity is enough to intensify a dish and transform a common recipe into a unique delight.
