|Tomatoes are probably the only ingredient in the Greek and Mediterranean diet that its origin is neither Greek nor Mediterranean. It was first grown in the Andes and traveled to Mexico and with the help of explorers it reached Europe in the 16th century. Tomatoes are quite acidic, which renders them easy to keep for long periods of time whether whole, chopped or in the form of sauce. When the tomato sauce is boiled it releases lycopene, which is a fat soluble ingredient with incredible features. Tomatoes also have vitamins, and other nutrients necessary for the human body.
